 In her latest Cooking with Kids video, Amy and children prepare an easy to make Spring dinner: succulent salmon and veggies. Why not try it at home with your very own little sous-chef?
- 1 pound salmon fillets)
- A few slices of onion
- 1 sprig fresh dill or 3 dashes of dried dill
- 1 bay leaf
- 3 tablespoons lemon juice
1. Pour 3-4 cups of water into a large sauté pan 2. Add onion slices, dill, bay leaf, and lemon juice to the water and bring to a boil over medium-high heat. 3. Add salmon, skin side down. Reduce heat to medium-low. Cover and cook for 5-8 minutes until salmon is opaque and fully cooked. (If water doesn’t fully cover the fish, flip halfway through cooking.) 4. Remove from pan. Discard cooking liquid and other pan contents. 5. For baby’s portion: Cool slightly. Use your fingers to separate the fish into bite-sized pieces making sure to check for small bones. 6. Serve with Cucumber Yogurt Dill Sauce (recipe follows) Servings: About 2.5 adult portions and 2 baby portions.
 
- 2 cups plain lowfat or whole milk Greek yogurt
- 1 medium cucumber, peeled, seeds removed, finely diced
- 1 clove garlic, minced
- 2 teaspoons olive oil
- 1 tablespoon white vinegar
- 1-2 teaspoons dried dill
- pinch of salt, optional for adult portions
Spoon yogurt into a medium bowl. Add all other ingredients and stir. Chill for 2 hours or overnight to allow the flavors to combine. WATCH VIDEO NOW!

  Project Peanut Butter is pleased to have reached its goal of raising $50,000 in our 4 to 1 matching grant, bringing to the total to $250,000 for PPB work in Sierra Leone. It is humbling for us to see how many generous people contributed toward reaching our goal.
