Most of us think of hummus as a party appetizer or as an adult lunch option. While many kids like to dip pita chips and carrot sticks in this delicious mixture, I rather tell you that there are many things you can do to take advantage of its nutritional value and have your kids gobble it up! Since school lunches happen to be my specialty, I’ll share with you one of our favorite ways to serve it up: in a turkey and hummus sandwich.
What I love about homemade hummus is that you don’t need any fancy equipment to make it; your blender will work just fine. The sandwich is simple: your favorite bread, a tablespoon of hummus in each side and the turkey in the middle. Of course, dress it as you like! This will soon become a favorite lunch option of the entire family. Enjoy!
Ingredients:
- 2 (14 oz) cans of chickpeas, drained and rinsed
- Juice from 1 lemon
- 1 1/4 cup of water
- 2 TB tahini
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1-2 garlic cloves
- Coarse salt and ground pepper
- Whole-wheat pita and crudités such as carrots, celery, red pepper and broccoli
Directions:
- In a food processor or blender, combine chickpeas, lemon juice, tahini, oil, cumin, and garlic in the food processor. Puree, about 1 minute.
- Begin to thin with water adding it in slowly until you reach the thickness/consistency you like. Season with salt and pepper and let cool; refrigerate, in an airtight container, up to 1 week.
Serve with pita bread, whole wheat baked chips and crudités.
