Healthy & Inexpensive: Frozen Vegetables

When both of my kids were young toddlers, a side of steamed frozen vegetables was a staple with their dinner.  I had to get those veggies in, right? The parental side effect is that my husband and I too, ate those boring and bland frozen vegetables as our sides.  Dinnertime was hectic enough and I just wanted to eat my plate warm.  Later, I discovered frozen vegetables with sauce… but unfortunately, my daughter is allergic to some of the ingredients found in the sauce.  Then, I got creative. Homemade to the rescue!

You can kick your veggies up a notch (or two) with easy and delicious add-ins.  Cook up 1 16oz bag of frozen peas, corn, green beans or broccoli according to the package directions.  Then, add them to the following recipe…and Bam!  There you have it (Emeril would be proud).

Creamy Lemon Parmesan Sauce

1/2 Cup grated Parmesan cheese

2 TB Fresh Lemon Juice

2 TB Olive oil

3 TB ½ & ½ or heavy cream (optional)

frozen_veggies

½ tsp Salt

½ tsp Black pepper

 

Asian Sauce

3 TB Teriyaki sauce

1 Medium red bell pepper

1 tsp Sesame seeds

 

Chili and Lime Sauce

2 TB Fresh lime juice

2 TB Olive oil

½ tsp Salt

½ tsp Black pepper

½ tsp red pepper flakes

 

All of these sauces can instantly be put together and will transform your frozen vegetables!  Finding variations can be really fun and the possibilities are endless thanks to all the different frozen vegetables in the freezer isle.  Enjoy!
