| Fun Lunch Idea - Tortilla Swirls |

Posted by: Trin This recipe was given to us by our San Diego HAPPYMAMA Ximena Now that the school year is in full swing we might start getting into a lunch box rut but serving up the same type of sandwiches daily. To jazz things up a bit try thinking outside of the box by using tortillas instead of bread for sandwiches. This recipe is also a great way to get some of those veggies in that your child may not want to try on their own.
Delicious Ranch Tortilla Swirls!
1 organic tortilla (it can either be corn, or flour or whole wheat flour) ¼ small-medium organic avocado 1 cube of HAPPYBABY Easy Going Greens or or 1 ounce HAPPYBABY Pouches Stage 3 Spinach Mango & Pears 1 tsp of organic ranch dressing 1 piece of turkey, ham or 3 slices of grilled chicken
In a bowl mix the “Easy Going Greens” with the ranch and the avocado, until it forms a creamy spread. Heat up the tortilla, spread the mixture on it, place the piece of turkey or ham on it. Roll it up, cut it into 1 inch pieces and you’ll end up with 5-6 swirls! Get creative with your swirls! You can add organic black beans to the spread for more fiber and nutrients. You can also add organic shredded carrots to add some color and crunch!
