A Recipe with a Latin Beat...

With Hurricane Irene on our heels here in the Northeast, we are busy preparing for the big event by stocking up on water, getting gas in cars, grills and generators, batteries for flashlights, snacks to keep our tummies full and fun activities to keep the little ones busy. One thing that you may not think of is what to do with all the food that may go bad if you lose power. This is a great recipe that can be made on your grill if you have a oven safe pan. You can use up those eggs, cheese and if you have HB Frozen foods in the freezer throw that in too.

 

HAPPY VEGGIE SPANISH FRITTATA

    fritta6 cubes HAPPYBABY peas, defrosted
  • 5 large eggs
  • 1/4 cup red bell pepper
  • 1 small red potato, chopped
  • 1 cup shredded Colby Jack cheese
  • 1/4 cup onion, chopped
  • 1 Tbsp fresh basil chopped (or 1 tsp dried)
  • 3 TB Butter
  • Pam Spray for pan
  1. Beat eggs. Add peas and stir until blended.
  2. In large bowl, mix bell peppers, potatoes, cheese, onion and basil. Add egg mixture. Mix well. Flavor with salt and pepper. Pour into greased oven safe pan and cook on medium heat until half way cooked through. Place in the oven to continue the baking process until the eggs are set.

Frittata's can be made with any sort of veggies and cheeses that you have on hand. If these are not in your fridge or pantry, not to worry. If you lose power think outside the box and make meals that are fun for your family and hopefully you will not lose too much food during the outage.

**These directions are for stove top directions and oven use. If you choose to make this on the grill you can use your side burner for the beginning of the cooking process then place in the grill, cover and let cook through.
