Hummus: A Healthy School Lunch |

Most of us think of hummus as a party appetizer or as an adult lunch option. While many kids like to dip pita chips and carrot sticks in this delicious mixture, I rather tell you that there are many things you can do to take advantage of its nutritional value and have your kids gobble it up! Since school lunches happen to be my specialty, I’ll share with you one of our favorite ways to serve it up: in a turkey and hummus sandwich.

When both of my kids were young toddlers, a side of steamed frozen vegetables was a staple with their dinner. I had to get those veggies in, right? The parental side effect is that my husband and I too, ate those boring and bland frozen vegetables as our sides. Dinnertime was hectic enough and I just wanted to eat my plate warm. Later, I discovered frozen vegetables with sauce… but unfortunately, my daughter is allergic to some of the ingredients found in the sauce. Then, I got creative. Homemade to the rescue!

I admit it. I know my children do not eat as many fruit and veggies as they should consistently. While I pack them a nutritious lunch with one serving of fruit and vegetables every day (using the MOMables™ menus), I slack off in our busy afternoons juggling between homework, the park and after school activities. It is true that I usually have ready-made healthy snacks for on the go; but eating another handful of carrots or grapes isn’t always in my kid’s preference list. What about after dinner? Do your kids ask for a “treat” for making a “happy plate”? Mine do! My solution: moist, delicious, super-sneaky blueberry & spinach brownies!

Now that the school year is in full swing we might start getting into a lunch box rut but serving up the same type of sandwiches daily. To jazz things up a bit try thinking outside of the box by using tortillas instead of bread for sandwiches. This recipe is also a great way to get some of those veggies in that your child may not want to try on their own.

If someone told me before I had kids that “snacks” would play an important role in our house, I honestly would have looked at them like they were from Mars. Fast forward six years, two kids, and a week filled of activities later and I’m the one who is from Mars for not having it figured out. Our lives are filled with after school activities, play dates and trips to the park. Kids just don’t “hold-their-hunger” till they get home like adults do.
