Recipe Contest Finalist - Leftover Turkey Salad

Our Holiday Recipe Contest is now over. Our HAPPYFAMILY team had so many wonderful HEALTHY choices to choose from that it made our decision even harder than we thought. We would like to thank everyone that submitted a recipe, our HAPPYFAMILY community is thrilled to have so many wonderful new choices for holiday entertaining and also weekday meals for the family. Remember just for submitting you will receive a BOGO coupon as a special THANK YOU, please look for an email from us coming soon.We had to narrow down our choices and pick the top 3 recipes that we thought were; family friendly, healthy, used in season ingredients and would be easy to prepare for a busy parent on the go.

Throughout this week we will be showcasing those recipes that we personally tested with our own families. On Friday we will revel the Grand Prize Winner that will win $100 worth of HAPPYFAMILY products, The Family Dinner Cookbook and some fun cooking items for parent and child from OXO.Our runner up recipes will also receive a prize of $50 worth of HF products and our cherished HF recipes to cook up for their own families.

The first recipe we would like to showcase was brought to us by Aimee. One of the things we liked about this recipe is that you were using leftover turkey from Thanksgiving in a healthier way. Our HAPPYMAMA Nicole from New Jersey spent time in the kitchen this holiday weekend mixing up a batch of Aimee's Leftover Turkey Salad. Nicole opted to use paprika, a combo of homemade mayo and yogurt as the dressing, and instead of pecans she used almonds because that is what she had at home.

Leftover Turkey Salad
Ingredients
3 cups turkey meat (or if you prefer chicken)
2/3 cup plain non fat yogurt (or if you prefer Mayo)
3/4 teaspoon cayenne or paprika
3/4 teaspoon sea salt
1 cup dried cranberries
1 medium size apple pealed and chopped (I like tart Granny Smith)
1/2 cup chopped celery
1 green onion chopped
1/3 cup minced bell pepper (any color)
2/3 cup chopped pecans (or if you prefer almonds)
Directions
In a large bowl mix together non fat yogurt(or Mayo) with paprika and sea salt. Stir in dried cranberries, chopped apple, celery, bell pepper, onion, and pecans (or almonds). Add chopped Turkey (or chicken) and mix well. Add some black pepper to taste and chill for at least 1 hour.
**add or substitute ingredients to create something healthy and fun for your family while putting your holiday left overs to use. It's completely customizable to your taste and what ingredients you have accessible to you in your fridge and pantry. You can make it G rated (paprika) or PG-13(cayenne pepper) If you don't tell them it's made with non fat yogurt they will never know!!! Trust me ;) Serve on bed of lettuce (lettuce bowls), sliced rolls or biscuits (left over from your Holiday dinner), a whole grain wrap. Makes approx 8 servings
